Hi, guys! Today I have something simple but healthy and tasty. Something that you can prepare for dinner or lunch and share it with your entire family (and I’m sure they will love it). The main ingredient here is a fish and as fishes are high in Omega-3 it is important to include them in your meals for a balanced diet.

The fish that I used this time is a cod, however, you can use the one, that you currently have at home. Something that spices up the dish and gives it nice refreshing taste is the beetroot salad with balsamic vinegar. I like including beetroot in all kind of dishes as some studies show that these veggies can decrease the risk of obesity, heart disease and/or diabetes – then why not to try.


Ingredients:
  • 200g of cod (or any other fish)
  • salt, pepper, herbs de Provence
  • 1tsp of lemon juice
  • 1 can of chopped tomatoes
  • oregano
  • 10g of fresh basil

Salad:

  • 2 cooked beetroots
  • a handful of rocket salad
  • 2tbsp of honey
  • 2tbsp of balsamic vinegar

Preparation:

  1. Heat up a non-stick pan.
  2. Season the fish with salt, pepper, herbs and lemon juice.
  3. Fry the fish for 2 minutes on each side.
  4. Blend tomatoes with fresh basil and oregano. Season with salt and pepper.
  5. Add your sauce to the fish and keep on a low heat for another minute.
  6. Cover the pan and put aside.
  7. Start preparing the salad.
  8. Chop beetroots.
  9. Mix beetroots with rocket salad.
  10. Season with salt and pepper.
  11. Drizzle with balsamic vinegar.
  12. You are now ready to serve:)
